Blueberry Goat Cheese Cheesecake
Sweet cheesecake with a savory touch
Ingredients:
FILLING:
• 12 OZ Softened Blueberry Goat Cheese
• 8 OZ Softened Cream Cheese
• 8 OZ Greek Yogurt
• 4 TBL Honey
• 1 TBL Lemon Juice - Fresh
CRUST:
• 2 CUPS Crushed Graham Crackers
• 6 TBL Melted Un-Salted Butter
• ½ TSP Cinnamon
BLUEBERRY SAUCE (OPTIONAL):
• 1 CUP Blueberries – Frozen, Pureed
• ½ CUP Granulated Sugar
• ¼ CUP Brandy
• ½ CUP Water
Preparation:
CRUST:
1) Set the oven to 350˚
2) In a bowl, add the graham crackers, butter & cinnamon
3) Mix with a fork till fully incorporated
4) Press into a spring-form pan with a ½ inch bottom & ¼ inch on the sides
FILLING:
1) In a mixer, combine all the filling ingredients
2) Mix till they are fully incorporated and smooth
3) Pour the filling into the crust
BAKE:
1) Place the cheesecake in a baking pan and add 2 cups of water to the pan
2) Place in the oven on a center rack
3) Bake for 35 minutes
4) At the end of the 35 minutes, crack the oven door for one hour
5) Refrigerate after till chilled through
BLUEBERRY SAUCE:
1) In a saucepan, add all the ingredients
2) Cook till thickened and coats the back of a spoon
