Brie & Roasted Shiitake Mushroom Flatbread

A quick yet elevated dinner option

Ingredients:

• 4 Flatbreads

• 1 La bonne Vie Triple Crème Brie 6oz, Thinly Sliced

• 2 CUPS Yellow Onion, Finely Julienne

• 2 TBL Unsalted Butter

• 1 TBL Honey

• 2 CUPS Whole Shiitake Mushroom, Capped

• 1 TBL Olive Oil

• 3 Garlic Cloves, Minced Finely

• ¼ TSP Fresh Thyme, Minced

• ¼ TSP Kosher Salt

• ¼ TSP Black Pepper

• 1 TBL White Truffle Oil

• 1 TSP Flake Salt

• 1 CUP Arugula

Directions:

1)  Mix the olive oil, garlic, thyme, salt & pepper

2)  Marinade the mushrooms overnight

3)  Set an oven to 350˚

4)  Place the mushrooms on a sheet pan and cook for 30 minutes – Allow cooling completely

5)  Slice the mushrooms thinly and set aside

6)  In a saucepot, place the butter and allow to melt

7)  Add the honey and mix completely

8)  Add the onions and cook to golden – Disperse evenly on a sheet pan to allow to cool

9)  Place 2oz Brie on the flatbread  

10)  Place 2 TBL on the caramelized onion over the Brie

11)  Evenly place the mushrooms over the top of the flatbread

12)  Place in the oven at 400 for 12 minutes

13)  Top with the arugula and drizzle with White Truffle Oil, and finish with flake salt
