Strawberry and Goat Cheese Crostini with a Spicy Twist

Sweet strawberries meet creamy honey goat cheese and spice in this irresistible, quick appetizer

Ingredients:

  • 1/4 TSP kosher salt

  • 1 TBSP fresh lime juice

  • 1 TBSP jalapeño chili, minced

  • Fresh mint, chopped

  • 1 (4 OZ) La Bonne Vie Honey Goat Cheese, softened

  • 1 (12 OZ) French baguette

  • 2 CUPS strawberries, chopped

Directions:

1) Slice the French baguette into 1/4-inch-thick diagonal slices.

2) Arrange the slices on a large baking sheet and bake at 350°F for approximately 10 minutes, until lightly toasted.

3) Allow the slices to cool completely for about 20 minutes.

4) Combine chopped strawberries, minced jalapeño, mint, fresh lime juice, and kosher salt in a small bowl. Stir until well mixed.

5) Spread 1 rounded teaspoon of softened goat cheese onto each toasted baguette slice.

6) Add 1 slightly rounded teaspoon of the strawberry mixture on top of the goat cheese. Finish with a sprinkle of freshly chopped mint.
