Salmon & Caviar Blinis

A perfect pairing of salmon, caviar, and crème fraîche on airy mini pancakes

  • 8 oz La Bonne Vie Crème Fraiche

  • ¼ cup Buckwheat Flour

  • ¾ cup All-Purpose Flour

  • 1 tsp Kosher Salt

  • ½ tsp Baking Powder

  • ¾ cup Whole Milk

Ingredients:

  • ¼ lb Clarified Butter

  • 1 Egg

  • 4 oz Smoked Salmon

  • 2 oz Caviar

  • 3 Chives, finely chopped

  1. Mix flours, salt, and baking powder in a bowl.

  2. Whisk milk, egg, and 1 tablespoon melted clarified butter in another bowl. Combine with the dry mixture until smooth.

  3. Heat 1 tablespoon clarified butter in a pan over medium-low. Drop ¾-ounce portions of batter into the pan. Cook until bubbly, then flip and cook through. Cool on a plate.

  4. Top each blini with 1 teaspoon La Bonne Vie Crème Fraîche, smoked salmon, and a small dollop of caviar.

  5. Garnish with chopped chives.

  6. Arrange the blinis on a serving platter and enjoy!

Directions:

Makes 20 Blinis, Serves 5
