Salmon & Caviar Blinis

Mini pancakes made with Creme Fraiche

Ingredients:

• ¼ CUP Buckwheat Flour

• ¾ CUP All-Purpose Flour

• 1 TSP Kosher Salt

• ½ TSP Baking Powder

• ¾ CUP Whole Milk

• 1 Egg

• ¼ LB Clarified Butter

• 1 Package Crème Fraiche

• 4 OZ Smoked Salmon

• 2 OZ Caviar

• 3 Chives, Finely Chopped

Directions:

1)  Mix both Flours, Salt and Baking Powder – Set Aside

2) Mix the Milk, Egg, and 1 TBL of the melted clarified butter

3)  Combine the two mixtures

4)  In a pan, place one tablespoon of clarified butter

5)  Place five drops of the blini batter - about ¾ of an ounce each

6)  Cook on Medium-Low heat till bubbly, then flip

7)  Cook through on the other side

8)  Place on the plate till cool

9)  Top each with one teaspoon of creme fraiche

10)  Evenly top with smoked salmon and then top with caviar

11)  Garnish with chives

Makes 20 Blinis, Serves 5
